Huysuz Çoban was born from a simple but essential idea at the heart of Kimera: to be closer to the land, to grow with intention, and to live in rhythm with nature.
Located just ten minutes from the hotel, this is a working farm where fruits and vegetables grow in step with the seasons, and goats and chickens move freely through the fields. Everything is cultivated using natural methods; free of chemicals, in harmony with the soil’s own pace. Patience is part of the process; nothing is rushed, and everything is harvested at the right time, in the right way.
What begins here finds its way to every corner of Kimera. From breakfast to dinner, much of what you taste is grown in these fields; from fresh produce and herbs to dairy and preserves. The flavors served throughout the hotel carry not only freshness, but a sense of place and care.
Huysuz Çoban is also a space to explore, pause, and reconnect. Guests are welcome to visit the farm to walk among the trees, pick ripe tomatoes straight from the vine, and for little ones, gather warm eggs from the coop. On select days, we host open-air breakfasts using produce harvested that very morning.
The farm also offers a special setting for intimate gatherings; from boutique weddings to private events. Beneath the olive trees and in the stillness of the garden, time seems to pass differently. It’s a space shaped by simplicity, light, and the quiet rhythm of nature.
Our philosophy here is not to work against the land, but with it. Every seed we plant, every step we take, is guided by the season’s natural rhythm. The idea of “from farm to table” isn’t a concept; it’s how we live.
Time spent at Huysuz Çoban is not only grounding; it brings a quiet clarity.
Not everything here can be taken home, but something always stays with you.
